Simple Radish Salad

Just a simple salad using those wonderful first crops that spring up in your veggie patch, or take advantage of the lower seasonal prices in your super market or greengrocer. You can of course add more veg if you would like but I like to keep it simple. I use a very light, simple vinaigrette so as not to overpower the taste of the fresh veg and I love adding flowers to salads...these are nasturtiums, but you can use violas, marigolds or daisy’s instead to pretty up your dishes!

Lettuce (fresh, washed and cut up or a bag of baby leaves) :: Radishes :: 3tbsp Olive oil :: 1tbsp Raspberry vinegar :: 1tsp of raw or local honey :: salt and pepper ::

  • Wash and place your lettuce in a pretty dish
  • Slice your radishes as thinly as possible and arrange them on top of your lettuce
  • In a clean old jam jar add your olive oil, raspberry vinegar, honey and salt and pepper
  • Screw the lid onto the jar, shake well and taste. Adjust the mix and seasoning if required
  • Pour your vinaigrette over the salad, toss slightly (but not so much all the radish ends up under the lettuce)
  • Garnish with pretty edible flowers
  • Team it up with a delicious main course in the sunshine
