Coloured Meringue Kisses

Super easy pretty little meringue kisses...perfect for gifts, popping on top of ice cream or creating a colourful Eaton Mess. I would recommend only making one batch at a time and if you want more to make a second batch rather than try to work with a lot of egg white and sugar, don't hurry the cooking - meringues take a while and if you would like bright colours use gel colours like Wiltons for the best results. You can use the left over egg yolks for pasta or mayonnaise.

3 large egg whites :: 175g caster sugar

  • Preheat the oven to 120 deg C
  • Line 2 baking trays with baking parchment
  • Put the egg whites in a large bowl and whisk until stiff (make sure it is stiff enough before you add the sugar or the mix will never stiffen up)
  • Add the sugar a spoonful at a time and watch to make sure each spoonful is whisked in well before adding the next spoon
  • Once all of the sugar is added the mixture should be stiff and glossy
  • Take a piping bag and paint lines of food colouring from the tip to about half way up the bag
  • Use a different bag for each colour you want to do
  • spoon the meringue mixture into the piping bag and snip the end off about 1 cm from the tip
  • start the piping by piping four small splodges in each corner of the baking tray and using this to stick the baking parchment down
  • Pipe out the kisses to have about a 5cm diameter at the bottom and a peak at the top
  • Put them into the oven and cook for around 1 hour.
  • Remove them when they lift easily from the baking parchment
  • Leave them to cool
  • Store in an air tight container
